Trevor Corson’s historical sushi dinners are generally available on Monday, Tuesday, or Wednesday evenings, and take place at the Michelin-starred Jewel Bako restaurant in Manhattan’s East Village.
Small parties of 2–4 people can usually be accommodated directly in front of the chef at the sushi bar. Larger parties will be seated at a table, and with sufficient advance notice, large groups of up to 26 people can reserve a private room for a special event. Trevor’s historical sushi dinners also make a unique gift.
“I have to admit that even Japanese diners could learn a lot from Trevor Corson’s Sushi Concierge dinner classes. Mr. Corson is restoring awareness of a disappearing tradition at the heart of Japanese culture.”

An Unlikely Saga of Raw Fish and Rice
by Trevor Corson
Trevor Corson works closely with a master sushi chef to create a highly authentic historical sushi menu, and then walks you through the meal, revealing the secrets behind what you’re eating—the surprising history of the cuisine, the characteristics of traditional Japanese sushi fish, the unique skills and techniques of the chef, and the etiquette tips that will help you do the right thing at a sushi bar.
These meals are quite different from the typical sushi most Americans are accustomed to eating, and the information Trevor provides—and the fun stories he tells—are both enlightening and entertaining. Even experienced sushi aficionados tell Trevor they learn a lot.
The meals have the added bonus of not relying on the usual high-end trophy fish and industrially farmed seafood that most sushi restaurants push on customers. By eating a more authentic meal, you’ll also be benefiting your health and the environment.

“I arranged for a dinner with Trevor Corson, the Sushi Concierge, as a present for my husband and several close friends to celebrate our wedding anniversary. The next day Trevor’s ears must have been burning, because my husband raved about it to everyone, and I felt like a genius in the gift-giving department.”
