Trevor Corson’s Sushi Concierge guided tasting events in New York City occur at the Michelin-starred Jewel Bako restaurant in Manhattan’s East Village on Monday, Tuesday, or Wednesday evenings at 6:30 p.m. Groups of six or more are required to reserve a new date, although small private dinners are also available. Group tastings and private dinners make a unique gift.
“I have to admit that even Japanese diners could learn a lot from Trevor Corson’s Sushi Concierge dinner classes. Mr. Corson is restoring awareness of a disappearing tradition at the heart of Japanese culture.”

Gastro Chic.
Trevor Corson works closely with a master sushi chef to create a highly authentic historical sushi menu, and then walks you through the meal, revealing the secrets behind what you’re eating—the surprising history of the cuisine, the characteristics of traditional Japanese sushi fish, the unique skills and techniques of the chef, and the etiquette tips that will help you do the right thing at a sushi bar.
These meals are quite different from the typical sushi most Americans are accustomed to eating, and the information Trevor provides—and the fun stories he tells—are both enlightening and entertaining. Even experienced sushi aficionados tell Trevor they learn a lot.
The meals have the added bonus of not relying on the usual high-end trophy fish and industrially farmed seafood that most sushi restaurants push on customers. By eating a more authentic meal, you’ll also be benefiting your health and the environment.
